Applesauce Spice Cake

This delicious cake has no cholesterol and only a trace of saturated fat. It is actually brimming with healthy ingredients- but no one will ever suspect that!

Ingredients

1 cup flour, all-purpose sifted
1 cup whole wheat flour sifted
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 cup oat bran
1 teaspoon cinnamon ground
1/2 teaspoon ginger ground
1/4 teaspoon nutmeg freshly ground
1/2 teaspoon clove ground
1/2 teaspoon salt
1/4 cup sugar optional
3/4 cup brown sugar lightly packed
4 each egg whites at room temperature
1/4 cup canola oil
2/3 cup apple juice
1 teaspoon vanilla extract
1/4 cup honey
2 cups applesauce unsweetened
1 cup raisins, seedless optional

Directions

Preheat oven to 350 degrees F.

Grease and flour a 12 cup Bundt or tube pan.

Sift both flours, baking powder, and baking soda into a large bowl.

Mix in the oat bran, cinnamon, ginger, nutmeg, cloves, salt, and both sugars until there are no lumps.

In another bowl, beat the egg whites until soft peaks form.

Beat in the oil, apple juice, vanilla, honey, and applesauce.

Stir half of the applesauce mixture into the flour mixture.

Beat in the rest of the applesauce mixture.

Beat on high for 1 minutes until everything is mixed well together.

Mix in the raisins.

Pour into the prepared pan and bake in a preheated oven for 50-60 minutes or until a cake tester comes out clean.

Let the cake cool and remove from the pan.

Cover with lemon glaze.

Sun-Dried Tomato Monkey Bread
