Packaged noodles with a sour cream and cheese sauce mix do the heavy lifting here, while canned tuna adds protein, green peas bring color and sweetness, and chopped pimentos give it little pops of mild, sweet pepper flavor.
The whole thing comes together in the microwave, making it one of the easiest weeknight dinners you can pull off.
Kitchen Tips
- Drain the tuna well. Excess liquid will thin out the cheese sauce and make everything watery. Press the can lid down firmly to squeeze out as much as possible.
- Don’t overcook the peas. You want them bright green and just tender. Overcooked peas turn army-green and mushy, which drags down the whole dish.
- Stir halfway through heating. Microwaves heat unevenly, so a good stir at the 2-minute mark ensures the cheese sauce melts smoothly throughout.

Directions
Boil or mircrowave peas until bright green but tender.
Cook noodles at according to package direction in a bowl in microwave oven.
Drain well.
- In a large 3-quart casserole, combine peas, noodles, packet of cheese sauce mix, tuna, mustard and pimento.
Place in microwave oven and heat at full power 3 to 4 minutes or until heated through.
