| 1 | pound | sweet potatoes, or yams | baked |
| 1/2 | cup | green peas | cold cooked |
| 1/2 | cup | pineapple | unsweetened, crushed |
| 3 | tablespoons | parsley leaves | freshly chopped |
| 1/3 | cup | salad dressing, fat-free | any type |
| 8 | each | lettuce leaves | optional |
Peel and slice sweet potatoes and place in a small bowl.
Add remaining ingredients; toss lightly.
If desired, serve on lettuce leaves.
