Smoked Sausage Stir-Fry

Smoked sausage stir-fried with broccoli, cauliflower, carrots, peppers, and onions, tossed with ramen noodles and soy sauce. A fast, filling stir-fry dinner in 40 minutes.

40 minRamen noodles just got a serious upgrade. Forget the sad microwave cup. Here, they get boiled with their seasoning packets and tossed with a loaded stir-fry of smoked sausage and crisp vegetables.
Carrots, celery, onions, broccoli, cauliflower, and bell peppers all get sauteed with bite-sized pieces of smoky sausage until crisp-tender and slightly charred at the edges.
Dump the cooked ramen right in, hit it with soy sauce, and you’ve got a one-pan dinner that’s bigger, bolder, and a whole lot more satisfying than anything that comes in a packet.
Kitchen Tips
- Cut the sausage into small pie-shaped pieces by quartering it lengthwise first, then slicing across. More surface area means more browning.
- Don’t overcook the noodles. Five minutes max. They’ll continue to soften when tossed with the hot vegetables.
- Serve with sweet and sour sauce on the side for dipping. It’s optional, but it adds a tangy contrast to all that smokiness.

Directions
Cut sausage into 4 long pieces, then slice through to make tiny pie shape pieces.
Sauté in large serving pan.
Add vegetables and sauté.
Cover and steam.
Meanwhile, boil 2 to 3 quarts water in a second pan and add Ramen noodles and seasonings.
Cook no longer than 5 minutes.
Pour noodles in with meat and vegetables.
Serve with soy sauce, sweet and sour sauce, rolls (or egg rolls), fruit salad and cookies for dessert.
