The filling pipes cleanly into fresh mushroom caps and holds its shape beautifully after a few hours in the fridge, which is exactly why this is a host’s best friend. Make it the night before, cover the platter, and your party appetizer is done before the guests even arrive.
Kitchen Tips
- Use the freshest mushrooms you can find. Older mushrooms release moisture and the caps get slippery - not ideal for a finger food.
- Softened cream cheese is key. Cold cream cheese tears the mushroom caps when you try to pipe or spoon it in.
- A piping bag fitted with a star tip makes these look far more impressive than they have any right to for a 30-minute recipe.

Directions
Rinse mushrooms well.
Remove the stems.
Mix the cream cheese, deviled ham, chopped olives and the seasonings.
Spoon or pipe the cheese mixture into the mushroom caps.
Garnish with pimento.
Place on platter, wrap and refrigerate until serving time.
These may be made a day in advance.
