| 1 | pound | ground beef | |
| 1/2 | each | onion | chopped |
| 1 | each | habanero pepper | very finely chopped |
| 1 | each | jalapeno pepper | very finely chopped |
| 1 | cup | black olives | chopped |
| 2 | cloves | garlic | minced |
| 1 | tablespoon | basil | |
| 1 | tablespoon | garlic salt | |
| 1/2 | tablespoon | lemon pepper | |
| 2 | tablespoons | hot chili sauce | |
| 6 | each | flour tortillas (10-inch) | |
| 3 | cups | enchilada chili sauce | |
| 4 | cups | cheddar cheese | shredded |
| 2 | cups | mozzarella cheese | shredded |
Pre heat your oven to 350
In 2inch skillet, cook your ground beef
While cooking add in your onions, habanero pepper, jalapeno pepper, garlic
Also sprinkle in your basil, garlic salt, lemon pepper
When your ground beef has turned a rich grey juicy color your stuffing for your enchiladas are ready
Spray your 9'x 13' 3qt. baking pan(glass perfered) with cooking spray oil
Take tortillas and stuff them with your meat, olives, a sprinkle of cheese and a drizzle of enchilada sauce
Roll and repeat
(Its better to roll your tortillas from one side to the other with the longest vertical part of the pan)
When finished rolling all 6 tortilllas, drench the top of them in the remaining enchilada chili sauce, and atop that sprinkle the rest of your cheese
Squirt a zig zaggy design along your enchiladas with your bottle of Sriracha Hot Chili Sauce
Toss in the oven for about 45min(watch it though. every oven heats slightly different. just enough to where you see the cheese bubbling. remember the meat is already cooked so the oven is just to soften the tortillas, heat the sauce and melt the cheese)
Let sit for about 10mins
Serve hot and beware the spicy treat your are about to encounter.
