Ingredients

1cup brown sugar
1tablespoon cornstarch
1/4teaspoon salt
8ounces pineapple crushed
2tablespoons lemon juice
1tablespoon prepared mustard

Directions

Mix brown sugar, cornstarch and salt in saucepan.

Stir in pineapple, lemon juice and mustard.

Cook over medium heat, stirring till thick.

Boil, stirring 1 minute.

Used on Baked Ham.

Naturally Sweet Pineapple Muffins

These muffins have a pleasant mild pineapple flavor and a good consistency. They are great for a diabetic diet or anyone wanting a sweet treat w/o the added sugar. Much better than bakedgoods made with artificial sweeteners. For variation, I would consider using less pineapple & adding blueberries and/or nuts. I filled 17 regular size aluminum muffin cups.
