If you're tired of the same old sandwich spreads, then try this variation of butter that's made with parsley leaves.

Ingredients

6 tablespoons butter
1 tablespoon lemon juice
2 1/2 tablespoons parsley leaves fresh, chopped
1 x salt
1 x black pepper freshly ground

Directions

Take butter and beat in a bowl until soft. Add 1 tablespoon of lemon juice 2 1/2 tablespoons chopped, fresh parsley, salt, and freshly ground black pepper. Beat thoroughly until all ingredients are well combined.

Chill in the refrigerator until firm. Makes a flavoured butter that adds zest to grilled fish and meat, or makes a crispy hot herb loaf.
