This onion-tomato version is the most common style you’ll find on home tables across north India, fresh, fast, and infinitely better than anything you can buy in a jar.
Thinning the yogurt with milk is the key. Straight yogurt sits too thick on the plate; thinned, it pours and coats and dilutes spicy bites without overwhelming the palate. Aim for the consistency of buttermilk.
Chat masala is the flavor maker here. This Indian spice blend (also spelled chaat masala) brings tang, salt, and a slight sulfurous note from black salt that’s the unmistakable taste of Indian street food.
