40 minThe old-fashioned liver and onions plate done the quick way: in the microwave. It sounds odd until you try it. The pie-plate method steams the onions tender and keeps the liver from drying out or overcooking, which is where most stovetop versions go wrong.
Sliced onions soften first in oil with black pepper and ground sage. Then the beef liver gets brushed with soy sauce, arranged thickest pieces to the outer rim of a 9-inch pie plate, topped with the onions, and finished in short bursts until just cooked through.
A finishing squeeze of lemon and a handful of chopped parsley are key. Acid cuts the iron-forward richness, and the parsley adds a fresh, grassy lift that keeps the dish from feeling heavy.
Kitchen Tips
- Thickest pieces outward, thinner pieces toward the center. Microwaves cook from the edges in, so this gives everything a shot at finishing together.
- Stop the moment the liver loses its pink. Overcooked liver turns gritty and livery in exactly the way people complain about.
- Let it rest the full 3 minutes after cooking. Carryover heat finishes the job without turning the meat chalky.
- Rinse and pat the liver dry before seasoning. A wet surface won’t pick up the soy sauce glaze.
- Use tamari in place of soy sauce for a gluten-free version with no flavor loss.

Directions
Cut liver into serving pieces.
Mix onions, oil, pepper and sage in 1-qt casserole.
Cover and microwave on high until onions are crisp tender, 4 to 6 minutes.
Brush liver with soy sauce.
Arrange with thickest pieces to outsied in 9- inch pie plate.
Spoon onions evenly over liver. Cover tightly and microwave on high (100%) 3 minutes; turn pie plate one-half turn.
Micro- wave until liver is no longer pink, 1 to 3 minutes (do not overcook).
Let stand 3 minutes.
Sprinkle with lemon juice and parsley just before serving.
