Three ingredients, no butter, and somehow the lightest scones you’ll ever pull from the oven. This Australian classic leans on a clever trick: the bubbles in fizzy lemonade, the clear sweet soft drink like Sprite or 7Up, not the cloudy American lemon drink, puff the dough up tall and tender.

There’s no rubbing cold butter into flour here. The richness comes from a cup of cream, which keeps the scones moist, while self-raising flour and the carbonation do all the lifting. It comes together in one bowl in about a minute.

The handling is the one rule that matters: pat the soft dough out gently with your hands, don’t roll it, and work it as little as you can. Overworking deflates those bubbles and toughens the crumb, so a light touch is key to that cloud-like texture.

Brush the tops with milk or egg for a golden finish, bake in a hot oven until risen and golden, and eat them warm with jam and a dollop of cream.

Directions

Mix flour, (a few sultana’s if used), cream and lemonade. Mixture will be soft

Turn onto a lightly floured board. pat down, do not roll, makes 12 scones.

Brush tops with milk or egg wash

Place on tray and put into a hot oven 220 for about 10mins until tops are golden.

Serve warm scones with jam if desired.
