1 hrsThis layered noodle bake is basically lasagna’s more relaxed cousin. Wide egg noodles replace lasagna sheets, crumbled Italian meatloaf patties stand in for ground beef, and the whole thing stacks up in a 13×9 pan with ricotta, mozzarella, and jarred spaghetti sauce.
The layering follows the classic lasagna logic: sauce on the bottom to prevent sticking, then noodles, more sauce, the crumbled meat with ricotta and half the mozzarella, another round of noodles and sauce, and finally the rest of the mozzarella on top. Twenty-five minutes in the oven melts everything together into a bubbly, cheesy bake.
Using pre-cooked meatloaf patties is the time-saving move here. They’re already seasoned with Italian spices, so the filling has built-in flavor without extra work.
Pro Tips
- Spread a thin layer of sauce on the bottom of the pan first. This prevents the noodles from fusing to the pan during baking.
- Don’t overcook the noodles. Cook them just to al dente since they’ll soften further in the oven. Mushy noodles make a soggy casserole.
- Let the bake rest for 10 minutes after pulling from the oven. This lets the cheese set slightly so slices hold together on the plate.
- Cottage cheese works as a ricotta substitute if that’s what you have on hand. Drain it well first.
Variations
- Veggie layer: Add a layer of sauteed spinach or sliced zucchini between the noodles and meat for extra vegetables.
- Sausage swap: Use crumbled cooked Italian sausage instead of meatloaf patties for a spicier, more traditional Italian flavor.
- Three-cheese: Mix Parmesan into the ricotta layer for a sharper, saltier cheese profile.
