Three ingredients, twenty minutes, and you’ve got a warm, gooey appetizer that looks like you hired a caterer. A whole wheel of Brie topped with toasted slivered almonds and baked until the cheese begins to bulge and soften inside its rind.

The magic moment is when the sides of the Brie start to push outward. That’s your cue that the interior has gone from firm to molten. Pull it too early and the center is still chalky. Leave it too long and the rind splits open, spilling cheese everywhere.

Toasting the almonds before they go on top is key. Raw slivered almonds taste flat and papery. Toasted ones are nutty, golden, and crunchy, and they stay that way even as the cheese melts underneath them.

Kitchen Tips

  • Place the Brie on an oven-safe board or platter before baking so you can serve it straight from the oven. Transferring molten Brie is a messy disaster.
  • Watch for the bulge. The rind should be tight and puffy, not split. That’s the sweet spot.

Directions

Sprinkle toasted almonds evenly over Brie.

When ready to serve, place on wooden plank or board with handle and bake at 350℉ (180℃) F until Brie begins to bulge around sides and is hot.

Serve with sesame crackers, if desired.
