Just three ingredients in the glaze and this turkey breast comes out with a gorgeous lacquered finish that tastes like fall. Honey brings sweetness, apple juice concentrate adds fruity depth without extra liquid, and dry mustard cuts through both with a sharp, peppery bite.

The trick is frequent basting during the uncovered hour of cooking. Each layer of glaze caramelizes on the surface, building up a sticky, golden crust that gets darker and more complex with every pass. Using concentrated apple juice instead of regular juice matters here because it clings to the meat better and doesn’t water down the honey.

Let the breast rest after roasting. Those 10 to 15 minutes let the juices redistribute so you get moist slices instead of a flood of liquid on the cutting board.

Directions

Combine Honey, Mustard and Apple Juice in A Small Bowl, Stirring Well;Set Aside.

Place Turkey Breast On A Rack in A Roasting Pan; Insert Meat Thermometer Into Meaty Portion So That It Does Not Touch The Bone.

Baste With The Honey Mixture.

Cover and Bake At 325 For 1 Hour.

Uncover and Bake An Additional Hour OR Until Meat Thermometer Registers170 Degrees, Basting Frequently With Honey Mixture.

Let Cool 10 To 15 Min. Before Slicing.
