Water is the unsung hero of the dipping step. Instead of egg or buttermilk, a quick dunk in plain water is enough to make breadcrumbs cling to the chicken. It also keeps the coating from getting heavy, which is the whole point of going oven-fried.

Pressing the crumbs firmly into the chicken matters. Loose coating falls off in the oven, leaving bald spots that dry out fast.

Directions

In a small bowl, combine crums and seasonings, dip chicken strips in water, then into crumb mixture, pressing crumbs to make sure they adhere and chicken is thoroughly coated.

Spray a non-stick baking sheet with non-stick cooking spray; arrange chicken on sheet and sprinkle evenly with remaining crumb mixture.

Bake at 350℉ (180℃) F until tender, about 20 minutes.
