| 5 | tablespoons | red wine vinegar | |
| 3 | tablespoons | olive oil | |
| 1/3 | cup | cilantro | chopped fresh |
| 2 | each | limes | juiced |
| 1 | teaspoon | sugar | white |
| 3/4 | teaspoon | salt | |
| 2 | cloves | garlic | minced |
| 1 | pound | soybeans (daizu) | green, frozen shelled |
| 3 | cups | corn kernels | frozen |
| 1 | pint | cherry tomatoes | quartered |
| 4 | each | scallions, spring or green onions | thinly sliced |
| 15 | ounces | black beans | rinsed and drained |
In a large serving bowl, whisk together the red wine vinegar, grapeseed oil, cilantro, lime juice, sugar, salt and garlic.
Set aside.
Bring a large pot of lightly salted water to a boil.
Add the soybeans and boil for 3 minutes.
Add corn to the boiling water and continue cooking for 1 more minute.
Drain very well, and pour into the bowl with the dressing.
Gently mix in the cherry tomatoes, green onions and black beans.
Cover and refrigerate for at least 2 hours before serving to chill and blend the flavors.

I've been bringing these cookies to a Christmas cookie exhange for 2 years now, and in each of those years they've been voted hands down the winner (amongst a large group of contenders). They are crunchy and chewy at the same time, and the chocolate and coconut melt in your mouth in the best possible way. I've always omitted the pecans, but I imagine that would put them right over the top!
