Ingredients

2 1/4 pounds chicken breast halves, boneless and skinless cut into 1 inch cubes
1/2 cup gin dry
4 each limes juice only
1/2 cup olive oil, extra-virgin
1 clove garlic minced
1 x salt to taste
1 x black pepper to taste
7/8 cups leeks sliced
1 cup tomatoes chopped
3/16 cups cilantro fresh
1/8 pound sundried tomatoes
1 x red hot pepper sauce (eg. Tabasco) to taste

Directions

Cut chicken into 1 inch pieces. pour Gin, fresh Lime juice, Olive Oil, salt and pepper.

marinate over night.

Place chicken on skewers. Recipe yields 30-40 pieces.

In a flat large fry pan, add a little oil and fry chicken until slightly brown.

Add marinate and remaining ingredients and finish cooking chicken.

Add a dash of tabasco.

Serve immediately, garnish with fresh chopped cilantro.
