| 2 1/4 | pounds | chicken breast halves, boneless and skinless | cut into 1 inch cubes |
| 1/2 | cup | gin | dry |
| 4 | each | limes | juice only |
| 1/2 | cup | olive oil, extra-virgin | |
| 1 | clove | garlic | minced |
| 1 | x | salt | to taste |
| 1 | x | black pepper | to taste |
| 7/8 | cups | leeks | sliced |
| 1 | cup | tomatoes | chopped |
| 3/16 | cups | cilantro | fresh |
| 1/8 | pound | sundried tomatoes | |
| 1 | x | red hot pepper sauce (eg. Tabasco) | to taste |
Cut chicken into 1 inch pieces. pour Gin, fresh Lime juice, Olive Oil, salt and pepper.
marinate over night.
Place chicken on skewers. Recipe yields 30-40 pieces.
In a flat large fry pan, add a little oil and fry chicken until slightly brown.
Add marinate and remaining ingredients and finish cooking chicken.
Add a dash of tabasco.
Serve immediately, garnish with fresh chopped cilantro.
