Think of these as Rice Krispie treats’ fun, fruity cousin. Instead of marshmallows, dry Jello powder melted with corn syrup and butter becomes the sticky binding agent that holds everything together. Trix cereal goes in while the mixture is hot, gets coated, and gets pressed into a buttered pan. Thirty minutes in the fridge and you’ve got bright, chewy squares ready to cut.
The Jello does something marshmallows can’t: it adds concentrated fruit flavor and color to the binding mixture. Pick any flavor you like. Strawberry turns the squares bright red, lime goes neon green, and orange gives you a sunset-colored batch. The cereal is already colorful on its own, so the Jello just amplifies the whole thing into something almost absurdly fun.
Heat the Jello, corn syrup, and butter just to boiling and no further. You need everything melted and combined, but overcooking the sugar makes the squares rock-hard instead of chewy. Stir the cereal in off the heat so it coats evenly without crushing the puffed pieces.
Kitchen Tips
- Use the buttered back of a spoon to press the mixture into the pan. Bare hands will stick to the hot sugar, and a dry spoon will drag the cereal around instead of pressing it flat.
- Don’t skip the chill time. The Jello needs those 30 minutes to set and bind everything into a firm, sliceable slab.
- Store at room temperature, not in the fridge. Refrigeration makes them too hard, while room temperature keeps them perfectly chewy.
- Cut with a sharp knife in one clean motion. Sawing back and forth crushes the cereal pieces.
Variations
- Use Fruity Pebbles or Froot Loops instead of Trix for a different cereal base.
- Match the Jello flavor to the cereal: strawberry Jello with berry-flavored cereal, or lime Jello with Trix for maximum color contrast.
- Drizzle melted white chocolate over the top for an extra-sweet finish.
