| 2 | pounds | fish fillets | cut into pieces |
| 1 | pound | shrimp | shelled |
| 2 | each | turtle meat | softshell, cleaned, parboiled until tender, cut into small pieces |
| 7 1/2 | ounces | crab meat | or about 6 blue crabs, boil and remove meat |
| 12 | each | clams | or 7-1/2 ounces canned, chopped |
| 1 | medium | onion | sliced |
| 1/2 | cup | scallions, spring or green onions | diced |
| 1/2 | cup | celery | chopped |
| 1/2 | cup | green bell pepper | |
| 1/2 | cup | mushrooms | sliced |
| 1/4 | cup | parsley leaves | chopped |
| 2 | cans | tomatoes, canned | 1 pound |
| 2 | each | garlic cloves | minced |
| 1/2 | teaspoon | thyme | |
| 1/2 | teaspoon | saffron | |
| 2 | each | bay leaves | |
| 1/2 | cup | vegetable oil | |
| 1 | cup | white wine | |
| 1 | x | red hot pepper sauce (eg. Tabasco) | |
| 2 | cups | fish stock |
Saute vegetables in oil until soft, about 10 minutes.
Add wine, stock, tomatoes and bring to a boil.
Add fish and remaining ingredients.
Cook over medium heat for 15 minutes.
Turn on low and simmer for 20 minutes.
Serve with french bread.

this was very tasty!A little tangy,a little sweet.I even got my husband to eat it.He is not one to eat meals like this.I used it as a side dish.I can't wait to try it with Pita bread.I was impressed by the size it was.
