Ingredients

2 pounds fish fillets cut into pieces
1 pound shrimp shelled
2 each turtle meat softshell, cleaned, parboiled until tender, cut into small pieces
7 1/2 ounces crab meat or about 6 blue crabs, boil and remove meat
12 each clams or 7-1/2 ounces canned, chopped
1 medium onion sliced
1/2 cup scallions, spring or green onions diced
1/2 cup celery chopped
1/2 cup green bell pepper
1/2 cup mushrooms sliced
1/4 cup parsley leaves chopped
2 cans tomatoes, canned 1 pound
2 each garlic cloves minced
1/2 teaspoon thyme
1/2 teaspoon saffron
2 each bay leaves
1/2 cup vegetable oil
1 cup white wine
1 x red hot pepper sauce (eg. Tabasco)
2 cups fish stock

Directions

Saute vegetables in oil until soft, about 10 minutes.

Add wine, stock, tomatoes and bring to a boil.

Add fish and remaining ingredients.

Cook over medium heat for 15 minutes.

Turn on low and simmer for 20 minutes.

Serve with french bread.

Black Bean and Millet Salad

this was very tasty!A little tangy,a little sweet.I even got my husband to eat it.He is not one to eat meals like this.I used it as a side dish.I can't wait to try it with Pita bread.I was impressed by the size it was.
