This fish and cheese chowder is minimalism taken to its extreme: two ingredients, one pot, and an hour on low heat. It’s the kind of recipe that shows up in old New England cookbooks, born from sparse pantries and fishing weeks where creativity had to stand in for groceries.

Flaking the fish thoroughly before it goes into the pan is what builds the chowder texture. As the fish cooks and crumbles further, it releases its natural gelatin and oils, which marry with the melting cheese into something surprisingly silky for a recipe this bare. The long simmer isn’t optional. It’s what concentrates the flavors and melds them into proper chowder territory.
