Broccoli florets get bound with cream of broccoli soup, milk, and a teaspoon of soy sauce for umami, then microwaved into a creamy side dish topped with the classic crispy french fried onions.
The soy sauce is the smart adjustment here. Just one teaspoon adds the savory backbone that pulls the dish from “steamed broccoli with sauce” into something that tastes like it had way more attention paid to it.
Most of the onions go into the casserole during cooking so they soften and flavor the sauce, but the reserved ⅔ cup gets sprinkled on top after the microwave so they stay shatter-crisp. That textural contrast is the move that makes the dish feel finished.
Kitchen Tips
- Use a microwave-safe casserole, glass or ceramic, never metal. Microwave power and metal don’t mix.
- Stir once midway through the microwave time. The center cooks slower than the edges and stirring evens it out.
- Don’t add the topping onions until after cooking. Microwaved fried onions go limp and lose every bit of their crunch.
- If the broccoli looks watery after cooking, drain off excess liquid before topping with the onions. Wet topping equals soggy crunch.
