Fava Beans, Shrimp and Savory with Orecchiette Pasta

Ingredients

2 1/2 pounds fava beans in the pod
3 tablespoons olive oil
2 teaspoons garlic slivered
2 ounces pancetta cut into tiny dice
3/4 pound shrimp medium size shelled
1 pinch red pepper flakes
1 tablespoon savory chopped, fresh
2 tablespoons basil chopped fresh
1/2 cup tomato seeded, diced
2 teaspoons lemon zest grated
8 ounces pasta, orecchlette (ear-shaped) cooked al dente
1 x chicken broth optional
1 x salt and black pepper

Directions

Remove beans from the pod and drop into boiling salted water for 1-2 minutes.

Strain and immediately drop into ice water to stop the cooking.

When cool, drain and remove the tough bitter outer skin.

Set beans aside.

Heat olive oil in a skillet and sauté garlic over moderate heat until soft but not brown, add pancetta and sauté 1 minute longer until translucent.

Add shrimp, fava beans, chile flakes and savory and toss until shrimp just turn pink, 1-2 minutes.

Add tomato, lemon zest and pasta and toss to warm through.

If mixture seems dry, add a little stock.

Season with salt and pepper and garnish with shavings of cheese and savory or basil sprigs.

Pineapple Pie

Wow! Thank's so much for this recipe! I tried this once years ago. I received all kinds of requests from relatives for the recipe. Unfortunately I lost the recipe after the only time I made it. I have been searching for it for over 20 years and came up empty. Even called and spoke with Borden's. Since I found it originally on Eagle Brand label. They could not help either. It is Fabulous I give it a 10!!
