Ingredients

2 1/2 cups chicken cooked, shredded
1 package seasoning for fajitas
1/3 cup water
8 ounces tortilla chips
1 1/4 cups cheddar cheese grated
1 cup monterey jack cheese grated
1 large tomato chopped
2 1/4 ounces olives ripe, sliced, drained
1/4 cup scallions, spring or green onions sliced
1 x salsa

Directions

In medium skillet, combine chicken, Spices and Seasonings for Fajitas and water; blend well.

Bring to a boil; reduce heat and simmer 3 minutes.

In large shallow ovenproof platter, arrange chips.

Top with chicken and cheeses.

Place under broiler to melt cheese.

Top with tomato, olives, green onions and desired amount of salsa.

Makes 4 appetizer or 2 main dish servings.

PRESENTATION: Garnish with guacamole and sour cream.

HINT: For a spicier version, add sliced jalapenos.

Chinese Steamed Cracked Crabs

I've now made this receipe 4 times in the past 2 weeks. Friends just raved over the wonder aroma and deep flavors. I upped the amount of ginger for even more exotic flavor. This is the BEST crab I've ever had. Go for it!!!
