30 minThis old-school microwave bake turns fresh cucumbers into a warm, saucy side dish you probably haven’t tried before. Layered with thin onion rings, dusted with flour, and drenched in ketchup before a crown of butter melts over the top, it’s a quirky throwback that deserves a second look.
The flour between each layer thickens the ketchup into a tangy glaze as the vegetables steam and soften. Slice your cucumbers evenly (about ¼ inch thick) so they cook through at the same rate, and separate those onion rings so they don’t clump into a solid mass.
Covering the dish is key here. That trapped steam is what cooks the cucumbers tender without turning them to mush.
Kitchen Tips
- Use firm, fresh cucumbers. Overripe ones with large seeds will get watery and fall apart.
- Check at the 12-minute mark. Microwave power varies, and you want the onions soft but the cucumbers still holding their shape.
- A deep casserole dish works best so the layers stay stacked and the ketchup doesn’t bubble over.
Variations
- Swap ketchup for salsa or marinara for a completely different flavor profile.
- Add a layer of shredded cheddar on top during the last 2 minutes for a cheesy finish.
- Toss in sliced bell peppers or zucchini for extra color and texture.
