| 1 1/2 | cups | crab meat | drained, all bits of shell removed |
| 1 | tablespoon | lime juice | fresh |
| 1/2 | teaspoon | lime zest | grated |
| 1 | each | scallions, spring or green onions | |
| 2 | tablespoons | parsley leaves | minced |
| 1 | teaspoon | worcestershire sauce | |
| 1 | teaspoon | prepared mustard | hot, prepared |
| 1 | x | red hot pepper sauce (eg. Tabasco) | to taste |
| 2 | tablespoons | butter | unsalted, melted |
| 16 | each | melba rounds | |
| 1/2 | cup | swiss cheese | grated |
Preheat broiler.
Combine crab, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot-pepper sauce.
Taste and adjust seasonings.
Brush melted butter on toast rounds and arrange in a single layerin a broiler pan.
Top each round with a portion of the crab mixture, then with 1-1/2 teaspoon cheese.
Broil until cheese is melted and crab mixture is hot.

This recipe is always a hit. I got this recipe from the newpaper years age and has never failed me. A great dish for entertaining.
