Eggs do real structural work here. Beaten into the hot grits, they thicken the casserole as it bakes, giving you a sliceable, custardy texture that holds together on a plate rather than slumping into a puddle. The 45-minute bake at 300°F (150°C) is intentionally low and slow so the eggs set without curdling.
Layering the cheese in two stages, half mixed in and half on top, creates two distinct textures: a creamy interior and a crackly cheddar-Parmesan crust dusted with paprika.
Pro Tips
- Cook the grits to fully soft before adding anything else. Grainy grits stay grainy through the bake; you can’t fix the texture later.
- Temper the eggs before adding. Beat them in a separate bowl, then stir a spoonful of hot grits in to warm them gradually before mixing in fully. Cold eggs into hot grits scramble unevenly.
- Use sharp cheddar, not mild. The bake mellows cheese flavor and mild cheddar disappears entirely.
- Don’t cover the dish during baking. The exposed top is what gets that craggy, golden cheese crust.

- Stir in a cup of cooked, crumbled bacon or sausage for a heartier brunch main.

Directions
Cook grits in water seasoned with garlic and salt according to package.
Remove from heat. Add butter and stir to dissolve.
Add Cheddar chese, holding back a good handful to garnish.
Now add eggs and mix completely.
Salt and pepper to taste. Place in a buttered 2-quart baking pan.
Sprinkle remaining Cheddar on top.
Sprinkle top with a generous amount of Parmesan, dust with paprika, garnish with jalapenos and bake, uncovered, in a 300 degree oven for 45 minutes.
