My kids all love carrot cakes, this time cooked these carrots cookies, they loved them too, so I will make these cookies very often too!

Ingredients

1/2 cup margarine soft or non-fat
1 cup honey or use 1/4 cup of water and 1/4 cup of sugar
1 cup carrots raw, grated
2 large egg whites well beaten
2 cups flour, all-purpose or whole wheat
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 cups oatmeal raw, quick cooking
1 cup raisins white

Directions

In a large bowl, cream together margarine and honey.

Stir in carrots and egg whites.

Stir together flour, baking powder, baking soda, salt, cinnamon, oatmeal and raisins.

Gradually stir flour-oatmeal mixture into creamed mixture, just until all flour is mixed.

Do not over mix.

Drop from teaspoon on greased baking sheet.

Flatten slightly and bake at 350 degrees for 10 minutes, or until lightly browned.

I didn't have high expectations with this one, but, thus far, it has been my favorite recipe I have gotten from this site. My family enjoyed it very much also. Very quick and easy, wonderful taste. Don't think this will fill you though, it's more of a side dish than a main dish in our opinion. Wonderful! Thanks!
