Ingredients

2 cups red onions finely chopped
2 tablespoons olive oil or vegetable oil
1/3 cup red wine vinegar
1/4 cup sweet red bell pepper chopped
2 tablespoons parsley leaves minced
2 cloves garlic minced
2 tablespoons artifical sweetener
1/4 teaspoon salt
1/4 teaspoon black pepper
15 ounces great northern beans rinsed and drained
15 ounces black beans rinsed and drained

Directions

Saute Onions in oil until crisp-tender in a medium skillet; Remove from heat and cool until warm.

Stir in vinegar, red pepper, parsley, garlic, NutraSweet (r) Spoonfull (tm), salt and pepper.

In a serving bowl put the beans, (both types) and pour the onion mixtrue over them.

Mix well and serve.

Eggplant Stuffed Peppers

This was a very good recipe!! It was really easy to make! I changed it a little bit by pouring spagetti sauce over the stuffed pepper and melted a thick layer of Provolone cheese on top. I put it over spagetti! Tasted GREAT!!!!!
