Ingredients

15 ounces black-eyed peas rinsed and drained
5 ounces ham chopped cooked, about 1 cup
1 stalk celery chopped
12 cup red onion chopped
1 clove garlic chopped
1 teaspoon jalapeno pepper finely chopped fresh
2 1/2 tablespoons red wine vinegar
2 tablespoons vegetable oil
1/4 cup parsley leaves flat-leaf, chopped

Directions

Stir together all ingredients and season with salt and pepper.

Let stand at room temperature 1 hour before serving.
