Ingredients

3 large eggs
1/2 cup vegetable shortening
1 1/2 cups sugar
1 cup bananas mashed
1/2 teaspoon baking soda
1/4 cup buttermilk or sour milk
2 1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
Banana frosting
1/2 cup bananas mashed
1/2 teaspoon lemon juice
1/4 cup butter
3 1/2 cups powdered sugar sifted

Directions

Cream shortening and sugar.

Add eggs one at a time and beat well after each addition.

Combine bananas, soda, vanilla and milk and add to creamed mixture.

Sift flour with baking powder and salt and add to the mixture.

Pour into two greased 8-inch round cake pans and bake at 350 degrees for 45 minutes.

Frost.

Banana Frosting:

Mix banana and juice together.

Cream butter with 1 cup of sugar , then add banana and remaining sugar until it is of good spreading consistency.
