Ingredients

1 cup pearl barley
1 each onion chopped fine
2 cups vegetable stock

Directions

Mix barley and onion with 1 cup boiling stock in pan or casserole with tight fitting cover. Bake in 300 degree F oven for 45 minutes. Add second cup of hot stock and continue baking 30 to 40 minutes or until barley is soft and mixture is almost dry. Makes 4 to 6 servings.

Variation: Add 2 tablespoons minced parsley; 1/2 to 1 teaspoons of your favorite herbs.

Grandma'S Swingin' Eggnog

Easy to make, the waiting was worst part(3 hr. chill time). It was very "Potent" as it said even after we cut the rum in half like it said. We loved it though and will reduce the rum even more this time! it was thick, creamy and went down so smooth. We doubled the batch and it was gone way to fast for only two people. So, may I suggest a triple or quad batch since the 3 hour wait to chill it seemed so long!!!
