| 2 | tablespoons | sesame oil | |
| 1 | tablespoon | ginger | minced fresh |
| 1 | tablespoon | shallots | minced |
| 1/2 | teaspoon | red chili peppers | hot, crushed, dried |
| 1/2 | teaspoon | coriander | ground |
| 1/2 | cup | rice vinegar | |
| 1/3 | cup | soy sauce | |
| 2 | tablespoons | oyster sauce |
Pour oil into a 10-12" frying pan. Place over medium-high heat until oil just starts to smoke, about 2 minutes. All at once, add ginger, shallot, chilies, and coriander. Stir for 30 seconds.
At once, add rice vinegar, soy sauce, and oyster sauce. Boil, uncovered, over high heat until sauce is reduced to 1 cup, about 1 minute.
Let cool.

These come out like shortbread and are fantastic. They are soft out of the oven and harden up as they cool. I cut the batch in fourth since it seemed like such a huge number of cookies, and my three year old daughter and I ate the entire tray in an afternoon! Make the whole batch! -LH 03-02-01
