| Mix and set aside | |||
| 1 1/4 | cups | whole wheat flour | |
| 1 | cup | oat bran | |
| 1/3 | cup | brown sugar | packed |
| 2 1/2 | teaspoons | baking powder | |
| 1/4 | teaspoon | baking soda | |
| 1/4 | teaspoon | salt | |
| 1/4 | teaspoon | nutmeg | ground |
| 1/4 | teaspoon | cinnamon, ground | |
| Combine | |||
| 1 | cup | milk, skim | or buttermilk |
| 2 | large | egg whites | |
| 2 | tablespoons | applesauce | or prune puree |
| Add | |||
| 3/4 | cup | apples | shredded and peeled |
Combine dry ingredients.
Mix wet ingredients in a small bowl. Add to wet ingredients to dry ingredients until just moistened. Mix apple into batter.
Spray muffin cups with non-stick spray and spoon about 1/4 cup batter into each muffin cup.
Bake in a 375 degree Fahrenheit oven for 18-20 minutes or until a toothpick inserted near the center comes out clean.
Makes 12 muffins.
NOTE: you can store batter, tightly covered, in the fridge for up to 5 days.
