I have a recipe for harvest cake I hope it's what your looking for: 3 c. flour-1 3/4 c. sugar- 1 tlb. baking soda- 1 tsp. cinnamon- 1/2 tsp. salt- 1 1/4 c. melted butter- 4 eggs- 1 tlb. vanilla- 1 c. chopped pecans- 1/2 c. raisins- 1/2 c. coconut- 3 c. grated raw carrots- 1 c. peeled grated apples. Mix flour, sugar & cinnamon. Mix in butter, eggs & vanilla. Stir in pecans, raisins, carrots & apples. Pour into 9x13 greased & floured pan & bake at 350 for 40-50 mins. FROSTING: 1/3 c. butter- 3 c. powdered sugar- 1 1/2 tsp. vanilla- 2-4 tlb. of milk. In saucepan melt butter till it begins to brown (do not burn). Add powered sugar, vanilla & milk at a tlb. at a time till desired consistancy. Frost cooled cake.
Hey,thx. a million for the recipe! Unfortunately, its not the same Harvest cake that my friend was talking about. It won't stop me from trying out this one, though, as this sounds yummy, too.
