Potatoes, Pasta, and Rice

Spaghetti Casserole
For 4 servings:
3/4 Lb Italian sausage, or
hot sweet ground beef
1/4 cup chopped onion, green bell pepper
(sauted in 1 tablespoon oil)
1 clove garlic, minced
1 can (1lb) tomatoes, broken up
1/3 cup cold water
3/4 tsp dried oregano leaves
1/2 teasp dried basil
1/4/ teasp salt and pepper
1/2 cup, broken spaghetti
3/4 cup shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
Tips:
The canned tomatoes with juice can be quickly blended
or processed to chop or puree in a blender.
Also use Italian sausage made with turkey
if you want and is available.
1. Remove sausage from casing. Brown meat in 9 or 10
inch iron skillet.
2. Drain all but 1 tablespoon fat. Stir onion, green pepper
and garlic. Saute 5 minutes.
3. Stir in tomatoes, water and oregano, basil,
salt, pepper, and spaghetti. Stir to combine. Push
spaghetti down in the liquid.
4. Cover tightly with foil.
5. Bake 375 degrees for 30 minutes, ot spaghetti is tender.
6. Cover with Mozzarella cheese. Leave uncovered.
7. Bake 5 minutes more until cheese is melted.
Serve right from skillet or transferr to serving dish.
