Pasta Salad with Ham
2 cups wagon wheel (or other) pasta -- uncooked
1/2 cup sour cream
3 tablespoons milk
2 teaspoons prepared mustard
1/8 teaspoon ground red pepper
1/3 cup sliced green onions
1-1/2 cups cooked ham -- cubed 1/2"
2 eggs, hard-boiled -- chopped
4 lettuce leaves
8 slices tomato
Cook pasta according to package directions. Rinse with cold water. Drain. Meanwhile, in large bowl, with wire whisk, combine sour cream, milk, mustard, and ground red pepper. Add cooked pasta, onions, ham, and eggs; mix lightly. To serve, spoon salad onto individual lettuce-lined salad plates; top each with two tomato slices. Salt to taste, if desired. Yield: 4 servings.
Awesome Ham Pasta Salad

Makes 6 servings
8 ounces ziti (or another) pasta
1 pound cooked ham, cubed
1 large red bell pepper, cut into 1 inch pieces
1 large green bell pepper, cut into 1 inch pieces
1 large red onion, coarsely chopped
15 small sweet pickles, chopped, juice reserved
1 cup cherry tomatoes, halved
1 cup mayonnaise
1/2 cup sour cream
2 1/2 teaspoons beef bouillon granules
1 tablespoon white vinegar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cloves garlic, minced
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large bowl, mix together the drained pasta, ham, peppers, onion, pickles and tomatoes.
In a small bowl, whisk together the mayonnaise, sour cream, beef bouillon granules, vinegar, salt, pepper, garlic and 1/2 cup of reserved pickle juice. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.
Ham and Macaroni Salad
1 cup dry wagon wheel or elbow macaroni
1 1/2 cups cubed fully-cooked ham (8 ounces)
4 ounces Monterey Jack or cheddar cheese, cut into cubes
1 cup frozen peas, thawed
1 stalk celery, thinly sliced
1/4 cup finely chopped onion
2 tablespoons diced pimiento
1/2 cup mayonnaise or salad dressing
1/4 cup sweet pickle relish or chopped sweet pickle
Salt and freshly ground pepper to taste
1 to 2 tablespoons milk (optional)
8 cherry tomatoes, halved
Snipped fresh parsley (optional)
Cook pasta according to package directions, preferably al dente (firm to the bite). Drain; rinse with cold water and drain again. In a large mixing bowl combine pasta, ham, cheese, peas, celery, onion and pimiento. Toss gently to combine.
For dressing, in a small mixing bowl stir together mayonnaise or salad dressing, pickle relish or chopped pickle, salt and pepper. Pour dressing over pasta mixture. Toss to coat. Cover and chill for 4 hours or overnight.
Just before serving, stir in milk, if necessary. Spoon pasta mixture into a serving bowl. Arrange cherry tomato halves around edge of bowl.
Lightly sprinkle with snipped parsley over top of salad, if desired. Makes 4 servings.
Macaroni and Cheese with Meat
from a recipe in McCall's Cooking School cookbook
2 cups macaroni or other pasta
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon Worcestershire sauce
2 cups milk
1/2 cup diced red bell pepper
2 cups grated cheddar cheese
1 cup diced cooked chicken or ham
Preheat oven to 375 degrees. Bring large pot of salted water to a boil; add pasta and cook 4-5 minutes, or slightly less done than al dente. Drain and set aside.
Meanwhile...
chop up the red pepper...
grate the cheese...
and dice the chicken (or ham).
Melt butter in saucepan over medium heat. Remove from heat and add flour, salt, pepper and Worcestershire sauce. Stir until smooth. Gradually add milk, stirring so there are no lumps.
Return saucepan to medium-high heat and cook, stirring constantly, until mixture comes to a boil and thickens. Add diced red bell pepper, reduce heat to low and simmer for one minute. Remove from heat.
Add cooked pasta, chicken or ham, and 1 1/2 cups grated cheese to the saucepan and stir to combine.
Pour into baking dish and sprinkle with the rest of the cheese.
Bake for 20 minutes...cheese should be melted and bubbly.
Spring Sweet Pea Pasta Salad
Serves: 6
Total time: 50 min Prep time: 35 min
1 (16 ounce) package bow tie (farfalle) pasta
1 tablespoon olive oil
3/4 cup sour cream
3/4 cup mayonnaise
1/4 cup lemon juice
1 tablespoon lemon zest
1 tablespoon dried dill weed
1 pinch cayenne pepper, or to taste
kosher salt to taste
1/2 cup diced red onion
8 ounces frozen green peas, thawed
8 ounces diced fully cooked lean ham
8 ounces cubed sharp cheddar cheese
2 sprigs fresh dill, for garnish

Bring a large pot of lightly salted water to a boil over high heat. Add the bow tie pasta, and cook until al dente, 8 to 10 minutes. Drain and rinse well with cold water, then toss with the olive oil, and set aside.

Stir the sour cream, mayonnaise, lemon juice, lemon zest, dried dill, cayenne pepper, and salt until smooth. Fold in the onion, peas, ham, Cheddar cheese, and bow tie pasta. Garnish with the dill sprigs to serve.
Ham and Cheddar Macaroni Salad

Ingredients
1/2 lb boiled ham (thick sliced) or 1/2 lb baked ham ( thick sliced) 1/2 cup cheddar cheese, diced 2 cups cooked elbow macaroni ( I cook it al dente) 1 cup chopped celery 1 small onions, chopped 1/2 cup dill pickles, chopped 1/4 cup mayonnaise 1/4 cup Miracle Whip 2 teaspoons prepared mustard salt and pepper Directions
Dice ham into 1/2-inch cubes.
Combine ham and cheese with macaroni, celery, onion and pickle.
Mix mayonnaise and mustard,Salt and pepper to taste.
Then stir into macaroni mixture, mixing well.
Chill well until ready to serve, several hours for maximum flavor.
Ruby Tuesday's Ham and Pea Pasta Salad

Ingredients:
Salad:
8 ounces macaroni, cooked and drained
8 ounces ham, 1/4" cubed, about 2 cups
8 ounces sharp cheddar cheese, 1/4" cubed
1 (10-ounce) package frozen peas, cooked and drained
Dressing:
3/4 cup sour cream
3/4 cup mayonnaise (not salad dressing)
1/4 cup lemon juice
1/2 cup grated parmesan or Romano cheese
2 teaspoons dried tarragon
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Directions:
In a large bowl combine salad ingredients.
In a smaller bowl, mix dressing ingredients. Pour dressing over
macaroni mix and toss to blend well. Cover and refrigerate several
hours or overnight.
Remove from refrigerator 30 minutes before serving. (More
mayonnaise or sour cream may be needed.)
