Can you freeze cream cheese?

- Anyone have any experience freezing cream cheese? I just bought a ton of it on sale (full fat) and was wondering if I could freeze some to extend it's life?

You can but the texture will turn gritty when the cream cheese is thawed.

Some report that the cream cheese is still usable in cheesecakes or other baked recipes and everyone recommends beating the previously frozen cream cheese for several minutes to help restore it's creaminess.

Low-fat or no-fat cream cheese does not freeze very well at all. If you are planning on freezing your cream cheese only freeze the full-fat varieties for the best results.
