I found a great Pumpkin Cake or Bar recipe on the Internet a number of years ago, but can't find it again. Can someone please help me?!
The recipe does not include a cake mix, has quite a number of ingredients and has a Coconut/Pecan topping.
If anyone knows of this recipe or can help me, I would appreciate it so much! Thank you!!! :D

Pumpkin Cake with Coconut Topping

Ingredients1 box yellow cake mix
1 can pure pumpkin
1/2 cup packed brown sugar
4 eggs
1/2 cup vegetable oil
2 t cinnamon
1/2 t nutmeg
1/4 cup milk

1 2/3 cups coconut
1/3 cup packed brown sugar
6 tablespoon butter
2 tablespoon milk
1 t vanilla
PreparationIn a large bowl, combine cake ingredients. With a hand held mixer, beat on high speed for about 2 minutes.
Preheat oven to 350°. Spray a 9x13" pan with cooking spray.
Pour cake batter into prepared pan. Bake 35-45 minutes, or til a toothpick inserted in the center comes out clean.
Meanwhile, combine the topping ingredients in a small saucepan over medium heat, stirring til blended. Simmer about 1 minute, or til thickenened.
Spread the topping over the warm cake. Let rest at least an hour before slicing.

Pumpkin Nut Bars Recipe
Serves 12
Ingredients:
•3 eggs, slightly beaten
•29 ounces canned pumpkin
•12 ounces evaporated milk
•1 cup granulated sugar
•1/2 teaspoon salt
•1 teaspoon ground allspice
•1 teaspoon ground cinnamon
•1 teaspoon ground ginger
•1 teaspoon ground nutmeg
•1 package yellow cake mix (super-moist variety preferred)
•3/4 cup margarine (or butter), melted
•3/4 cup chopped pecans
Directions:
1.Preheat oven temperature to 375F (190C)
2.Grease a 9 inch by 13 inch baking pan with 1 teaspoon butter and set aside
3.In a large mixing bowl combine the beaten eggs, canned pumpkin, evaporated milk, granulated sugar, salt, allspice, cinnamon, ginger, and nutmeg. Stir thoroughly to combine the ingredients.
4.Pour pumpkin mixture into the greased baking dish and spread into an even layer
5.Sprinkle the cake mix evenly over the pumpkin mixture
6.Drizzle the melted butter evenly over the top of the cake mix, then sprinkle with chopped pecans
7.Place baking dish into the 375F (190C) oven and bake for 50 minutes
8.Remove baking dish from oven and allow to fully cool. Refrigerate for at least one hour.
9.Cut into 12 squares. The pumpkin squares may also be topped with whipped cream before serving.
This recipe can be made within an hour using a cake mix and canned pumpkin. The pumpkin bars have all the flavor of pumpkin pie without all of the hard work.
Quick to make, these pumpkin bars might just become a favorite Thanksgiving recipe.
PUMPKIN CAKE BARS
4 eggs, well beaten
2 c. cooked pumpkin or 1 (1 lb.) can
1 1/2 c. sugar
1/4 tsp. salt
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves
1 yellow cake mix
1/2 c. butter, melted
1 c. chopped pecans
Mix eggs, pumpkin, sugar, salt, ginger, cinnamon, and cloves together; pour into a 13 x 9 pan. Sprinkle dry cake mix on top. Drizzle melted butter over mix; spread chopped nuts over all.
Bake at 325 degrees for 1 hour 20 minutes.
(Cover with foil loosely to keep from browning too soon for the first half of cooking time.)
Cut into squares; serve topped with whipped cream.
Yield: 24 bars
