Cream Cheese Roll-Ups

Ingredients

12 ounces cream cheese, softened

1/2 cup sugar

1 teaspoon almond extract

1 egg

2 loaves white bread

3/4 cup butter, melted

3/4 cup sugar

Directions

1Beat together cream cheese, 1/2 cup sugar, almond extract, and egg.

2Trim crusts off bread and flatten each piece with a rolling pin.

3Keep bread slices under a damp paper towel so they do not dry out.

4Spread cream cheese mixture on bread slices and roll up like a jelly-roll.

5Dip each roll in melted butter and roll in remaining sugar.

6Bake at 400 degrees for 15 minutes.

7***Maybe served warm or at room temperature.

Peanut Butter Roll Ups

Ingredients

12 slices white bread

1/4 cup peanut butter

1/4 cup sugar

2 tablespoons ground cinnamon

2 tablespoons butter(melted)

Directions

1Cut crust from bread.

2Roll to 1/8 in thickness.

3Spread some peanut butter on each slice.

4Combine sugar and cinnamon and sprinkle evenly over each slice.

5Roll up each slice jellyroll style.

6Place seam side down in a lightly greased pan.

7Brush melted butter over rolls.

8Bake at 350 for 7min on each side.

Pumpkin Cream Cheese Roll

Ingredients

3 eggs

1 cup sugar

2/3 cup canned pumpkin
or peanut butter

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

3/4 cup flour

Filling

1(8ounce)package cream cheese, softened

4 tablespoons butter, softened

1 cup powdered sugar

1 teaspoon vanilla

Directions

1In a large bowl, beat eggs and sugar. Beat in remaining cake ingredients.

2Grease a 10"x15" jelly roll pan. Line pan with waxed paper, then grease and lightly flour the waxed paper.

3Pour batter into the pan and spread evenly. Bake at 350F for 15 minutes. *Cake cooks fast so watch carefully to avoid burning the edges.

4While cake is baking, sprinkle powdered sugar heavily over the kitchen towel, using a sieve or sifter.

5Turn hot cake onto the towel.

6Remove waxed paper. Trim off burnt or crusty edges.

7Sprinkle more powdered sugar over the hot cake and quickly roll up with towel inside. Let cake cool completely, about 30 minutes.

8Meanwhile, prepare filling by beating together all ingredients until smooth and creamy.

9Unroll cooled cake and spread with the filling mixture. Roll up cake with filling on the inside. Wrap in waxed paper and then foil.

10Refrigerate or freeze. To serve, slice cake about 1/3 inch thick and sprinkle with powdered sugar.

11Note - cake cuts best when still slightly frozen.
