Lost my copy of a ricotta cheese pie with a sweet crust and lattice top from an early 80's McCall's Cooking School article. Also had some lemon zest and juice in it.

Ricotta Cheese Pie With Pine Nut Crust

----CRUST----

1/4 cup butter unsalted

3/4 cup crumbs from amaretto cookies

1/2 cup pine nuts

----CHEESE FILLING----

15 oz ricotta cheese

1/2 cup sugar

1 1/2 cup sour cream

2 tablespoon four

2 teaspoon lemon peel

2 eggs

Berries, grapes, or orange garnish. To make crust, place melted butter in 9 inch pie plate. Stir in cookie crumbs and pine nuts until well blended. Press firmly against bottom and sides of dish to form crust. Heat until set. To make filling, combine ricotte cheese, sour cream, sugar, flour, lemon peel, and eggs in 8 cup glass measure. Heat until center is very warm to the touch, stirring every two minutes. (Microwave is easy). Mixture will be a little lumpy at this point but will cook into a smooth pie. Pour filling into crust, smoothing it evenly on top. Place pie on top of microwave proof cereal bowl and microwave on medium for 8 to 14 minutes or until almost set in center, rotating one quarter turn once or twice. Let stand directly on counter for 30 minutes. Chill for 3 hours or overnight before serving. Garnish pie. To test to see if done, touch the top 1 inch from the center with your finger. When top adheres to your finger, cheese cake underneath should appear to be moist but set, not gooey. Sides should begin to pull away from dish.

McCall's ricotta pie

Measure Ingredient

1? cup Crushed graham crackers *

1/3 c cup Melted butter. *

1 pounds Ricotta cheese;

2 Eggs;

? cup Ugar;

1 tablespoon Vanilla

line or 10 inch pie pan. Beat above ingredients until smooth.

Pour into cracker shell and bake at 350 degrees for 20 minutes.

Remove from oven. Set oven to 450.

Add: 2 tbsp. sugar to 1 pint sour cream and spread (spoon it first; don't dump!)

over pie. Return to oven for 10 minutes.

Topping: In saucepan combine 1 can black cherries cut in pieces; 1/2 cup sugar,

and scant 3 tbsp. cornstarch. Cook and stir until thick and clear.

Makes 8-10 portions.

Thanks so much for your reply, the one I'm referring to came from the "McCall's Cooking School" feature in their monthly magazine. You made the crust from a mildly sweet, almost cookie-type dough, and also created a lattice top. I think the issue would have been from'79 to perhaps '81 or '82. It was very light, don't recall there being sour cream in it, but I could be mistaken.

Subject: McCall's Great American recipe card collection

Hello,

I've noticed that there's a lot of buzz about these recipes, and I want to offer
a set for sale. I bought it for a customer (I have a cookbook store) and then
found that I couldn't get in touch with her. I just don't have space for it in my
shop!

It's complete, as far as I can tell, and has the index booklet. Except for a few
bent corners here and there and ONE small tear, the cards and dividers are in
great shape, crisp and clean, as is the recipe box.

The set is $50 plus shipping. The shipping charges will depend on how you
want it sent; I will charge $2.00 over the actual shipping cost for handling.

First come, first served, of course, and I just have the one. I'm hoping to find
it a loving home!

I have been looking for McCall's ricotta cheese pie as well. I used to make this all the time; however, the recipe I had used orange juice in the crust and a teaspoon of almond extract in the filing. If anyone has this recipe I would appreciate a copy of it. Thanks!
