At TED MONTANA's restaurant in the DC area, they serve the most amazing "munchie" -- cucumbers! I would like to know how these are prepared!!! Can anyone help me out???

I asked them that when they served the second bowl!! No--these are cukes that have to be fixed within an hour of serving --- they were MARVELOUS!!!The only ingredient I could 'suspect' was olive oil--light. But they had to do some kind of prep to make these cukes super crisp and light!!! I could not get any more information from the waiter...darn!!
