Bananas are wetter a ingredient than
blueberries. They will make your batter very heavy and harder to rise..

BANANA GINGER MUFFINS
Mix together:
1/3 c. cooking oil
1/4 c. molasses
1 egg
1 c. mashed bananas
DRY INGREDIENTS:
1 1/4 c. white flour
1/2 c. whole wheat flour
1/4 c. sugar
1/4 c. wheat germ
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. ginger
1/4 tsp. allspice
1/4 tsp. cinnamon
Preheat oven to 375 degrees. Grease and flour muffin pans.
Sift dry ingredients together and place in large bowl. Add other ingredients and mix well. Pour into prepared muffin pans. Bake 15-20 minutes until toothpick comes out clean.

BANANA NUT MUFFINS
Sift together:
1 c. sifted flour
1/2 tsp. baking powder
Dash salt
Also will need::
3/4 c. oatmeal
1/2 cup sugar
1/2 c. milk
1 egg
3 tbsp. oil
1/2 c. mashed bananas
1/3 c. chopped nuts
Bake at 400 degrees for 20 minutes.
Makes 12 muffins.
