It looks like you have alot of the Great American Recipes cards, so I was wondering if you could help me out on a meatloaf recipe of theirs? All that I remember is that I put ketchup and something else mixed together on the top. If you can help me I'd really appreciate it. I haven't been able to find mine for the last couple of years. Thanks!

Great Ways with Ground Beef Group 8

Cottage Meat Loaf

Amount Ingredient

1 1/2 pounds ground beef

1/2 cup tomato ketchup

1/2 cup tomato juice

1/2 teaspoon salt

1/2 teaspoon black pepper

1/8 teaspoon red pepper

2 eggs, beaten

3/4 cup fresh bread crumbs

1/4 cup chopped onions

2 teaspoons prepared mustard

Topping

1/4 cup tomato ketchup

1/2 teaspoon prepared mustard

2 teaspoons brown sugar

Fresh herbs, for garnish (optional)

Preparation Tips:

1. In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions, and mustard. Mix until thoroughly blended.

2. Add ground beef. Mix gently but thoroughly.

3. Line a 9-by-5 inch loaf pan with foil. Press in the beef mixture.

4. In a separate bowl, combine the topping ingredients, mixing well. Spread topping over the meat loaf.

5. Bake at 400 degrees for 35 to 45 minutes or until done.

6. Drain off fat. Rest meat loaf 5 minutes before serving. Garnish with fresh herbs, if desired.

Makes 5 to 6 servings.

Tip: Good served with spinach salad, mashed potatoes and buttered broccoli.

Great Ways with Ground Meats Card 49 Group # 8

For 10 by 4 inch meat loaf,
8 servings, you need:

1 lb gr beef, round or sirlion

1/2 lb gr veal

1/2 lbs gr lean pork

2/3 cup bread crumbs

1 Tlbsp minced garlic

1/2 tsp dry thyme leaves, crumbled

1/2 tsp salt

1/2 tsp black pepper

1 egg

1/2 cup finely chopped onion

4 to 6 strips bacon

1. In deep bowl, combine the meats, bread crumbs, garlic, thyme,
salt, pepper, egg and onion. Knead vigorously with hands. Then with a spoon.
Beat until mixture is smooth.

2. Press down. Form a tight loaf, about 10 inches long
and 4 inches wide.

3. Place strips of bacon over meat loaf.

4.Place meat loaf in a shallow baking or loaf pan.

5. Bake at 350 degrees in middle oven for 1 hour and 20 minutes
or until juices run clear when tested.

6. Let cool to room temperature or chill completely before serving.

GARC Pinewheel Meat Loaf

Great Ways with Gound Meats Card # 37 Gr 8

For 4 servings:

1 1/2 lbs gr lean beef

1/2 cup crumbs

1 1/4 teasp salt

1/2 teasp pepper

1 egg

1 pkg (10 oz) spinach frozen, chopped ,defrosted then well drained

3/4 cup shredded mozzarella cheese, divided

3 Tlbsp grated Parmesean cheese

1/2 teasp oregan or marjoram or rosemary leaves

1 cloves, minced

1/4 cup ketchup, divided

Chopped parsley

1. Combine gr beef, bread crumbs, egg, 1 tsp salt,
and pepper and 2 tablsp ketchup, mixing lightly.

2. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan, herbs, remaing
salt and garlic.

3. Pat out the meat mixture to a 14 x 18 inch rectangle on wax paper.
Spread spinach filling over beef to 3/4 inch from the edges.

4. Roll up from short end , jelly roll fashion, to enclose
filling to form a pinwheel loaf. Press beef mixture around filling at both ends.

5. Place loaf. seam down, on rack in roasting pan.

6. Bake 350 F for 1 hour.

7. Spread remaining 2 tablspoons ketchup over meat. Bake 15 minutes longer.

8. Sprinkle with remaining Mozzarella cheese and parsley. Serve hot or chill and serve cols.

Thank you so much for taking the time to do this for me! The first recipe sounds like the one that I loved! I don't cook much, but I remember always loving that meatloaf, so I'll give it a try. No matter what I cook, I'll never out-cook my fiance! Have a wonderful weekend!
