I once had a really good cornbread at a restaurant...it was almost like yellow cake, very sweet, very smooth. Does anyone know where I can get a really sweet cornbread recipe? My husband adds more sugar to a box mix or recipe, that just succeeds in making it sweet, but flatter, and it's still grainy. Thanks!
MOM'S CORNBREAD
1 Cup Yellow Cornmeal
1/2 Cup sifted all purpose Flour
1 teaspoon salt
2 teaspoon baking powder
1 Tablespoon Sugar (optional)
2 eggs
1 Cup Milk
1/4 Cup Vegetable Oil
Heat oven to 450degrees. Grease a 8 or 9 inch Cast Iron Skillet or
Baking pan. Combine dry ingredients. Stir in milk, oil. And eggs. Mix
Just until dry ingredients are moistened. Pour batter into prepared
Pan. Bake 20 to 30 minutes, or until golden brown, and wooden
Tooth pick inserted in the center comes out clean. Serve Warm.
Sounds to me as if you are looking for the "Boston Market" cornbread recipe, which is "Jiffy" cornbread mix and "Yellow Cake Mix" combined. More like cornbread flavored cake than cornbread. If you can't find the recipe from "Google", reply to this message and I'll find it for you. Very popular recipe but definitely not a corn bread per se. I made it once and it is very tasty but still ... isn't cornbread as we know it here in Texas
Try 2 cups self rising cornmeal, 2 cups buttermilk, and 1 egg. Add 1 tablespoon sugar. stir real good. Melt about 2 tablespoons cooking oil in skillet. Place skillet in oven at 450 degrees. When oil is hot pour into the cornbread mixture, stir oil into the mixture. Pour in hot skillet and bake about 20 mminutes.

This is the recipe you want! It is made into muffins in this recipe but there's no reason why you can't put it into a flat pan.
Corn Muffins
1 cup Heckers or Ceresota Flour
1 cup cornmeal
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup half and half
1 egg, lightly beaten
Preheat oven to 400degrees. Grease muffin tins.
In a large bowl, stir together the flour, cornmeal, sugar, baking powder, and salt. Add butter and mix til crumbly. In a separate bowl, mix the half and half with the egg and fold the liquid mixture into the flour mixture. Spoon into tins, filling to the top. Bake 25 minutes. They will not get very brown on top.
