Hi, i have lost my issue from about 2 yrs ago..there was a recipe called apple cider cake and i wish i had that recipe..if someone could help i would love it..please look to see if u have it ...thanks

OCTOBER CIDER CAKE

3/4 c. oleo or shortening

1 1/2 c. brown sugar

3 eggs

3 c. all-purpose flour

1 Tbsp. baking powder

3/4 tsp. salt

1 tsp. ground nutmeg

1 tsp. ground cinnamon

1/4 tsp. ground cloves

1 c. apple cider (from Lela

Tindle's Orchard)

1 Tbsp. lemon juice

Cider Filling

Creamy Cider Frosting

1/2 c. chopped pecans for

garnish

Cream oleo, gradually adding sugar, beating well. Add
eggs one at a time, beating well after each addition. Combine
flour, baking powder, salt, nutmeg, cinnamon and cloves. Add
to creamed mixture, alternately with cider beginning and ending
with flour mixture, stir in lemon juice. Pour batter into 3
greased and floured 8-inch round cake pans. Bake at 350 degrees for
25 minutes or until toothpick inserted in center comes out
clean. Cool in pans 10 minutes, remove layers from pans and
cool completely. Spread Cider Filling between layers and
spread Creamy Cider Frosting on top and sides. Garnish top of
cake with chopped pecans. Yield: one 3 layer cake.

Cider Filling:

1/2 c. sugar

3 Tbsp. cornstarch

1/4 tsp. salt

1 c. apple cider

2 Tbsp. lemon juice

2 Tbsp. butter

Combine sugar, cornstarch and salt in heavy
saucepan,
gradually stir in cider. Cook over medium heat, stirring
constantly until thickened. Remove from heat. Stir in lemon
juice and butter. Cool.

Creamy Cider Frosting:

1/2 c. butter or oleo

1/4 tsp. salt

1/4 c. plus 1 Tbsp. apple

cider

approximately 4 1/2 c.

powdered sugar

Combine first three ingredients in a heavy
saucepan.
Boil 1 minute, stirring constantly. Remove from heat, cool.
Gradually add sugar until spreading consistency, beat until
smooth. Add 1/2 cup chopped pecans. Garnish top of cake with
additional 1/2 cup pecans.

APPLE CIDER POUND CAKE

1 c. butter or margarine,
softened

1/2 c. shortening

3 c. sugar

6 eggs

3 c. all-purpose flour

1/2 tsp. baking powder

1/2 tsp. salt

3/4 tsp. ground cinnamon

1/2 tsp. ground allspice

1/2 tsp. ground nutmeg

1/4 tsp. ground cloves

1 c. apple cider

1 tsp. vanilla extract

Combine butter and shortening, mixing well. Gradually
add sugar, beating well. Add eggs, one at a time, beating well
after each addition. Combine dry ingredients; add to creamed
mixture alternately with apple cider, beginning and ending with
flour mixture. Mix well after each addition. Stir in vanilla.
Pour batter into a well greased 10-inch tube pan. Bake at 325 degrees
for 1 hour and 50 minutes or until cake tests done. Cool in
pan 10 to 15 minutes; remove cake from pan and let cool com-
pletely.

APPLE CIDER SPICE CAKE

1 (18 3/4 oz.) pkg. spice cake
mix

1/2 c. cornstarch

4 eggs

1 c. apple cider or juice

1/2 c. mayonnaise

2 c. finely chopped walnuts
confectioners sugar

In a large bowl with mixer at low speed stir together
cake mix and cornstarch until well mixed. Add eggs, cider and
mayonnaise; beat just until blended. Beat on medium speed 2
minutes or until batter is smooth. Stir in walnuts. Pour into
greased and floured 12 cup tube pan. Bake in a 350 degrees oven for
an hour or until cake tester inserted in center comes out
clean. Cool in pan 20 minutes. Remove from pan and cool
completely on wire rack. Just before serving, sprinkle with
confectioners sugar.
