4 Chicken Breasts, boneless and skinless cut into 1 inch chunks
EVOO (Extra Virgin Olive Oil) to saute
1 Tbsp. Dried Thyme
1/2 - 1 Tsp Crushed Red Pepper (or to taste)
3/4 Tsp. Salt
1 Tbsp Garlic, minced (or to taste)
7 oz Lemon Juice, fresh squeezed
7 oz. Honey
15 oz. Canned Artichoke Hearts, quartered
Angel Hair Pasta cooked al dente
Fresh Fennel Bulb, trim greens, halve and slice bulb
Red Bell Pepper, seeded cut into strips
EVOO to saute
Salt and Pepper to taste
Method: Saute chicken over medium high heat to golden brown, add garlic and spices, add artichoke, deglaze with lemon juice, add honey. Serve over pasta with sautéed fennel and red bell pepper.
