Turtle cake made with German chocolate cake mix, melted caramels, chocolate chips, and chopped nuts. Gooey caramel layers baked right into a rich chocolate base.

65 minTurtle cake takes everything great about turtle candy and bakes it into a 9×13 pan. A German chocolate cake mix forms the base, but the real action is the caramel layer hiding in the middle.
Half the batter goes in first and bakes just 15 minutes to set. Then a full bag of caramels melted with milk and butter gets poured right over that warm layer, followed by chocolate chips and chopped nuts. The remaining batter goes on top and the whole thing bakes again.
That two-stage baking is what makes this work. The caramel sinks into the first layer and stays gooey while the top bakes through. You end up with a fudgy, pull-apart texture with ribbons of caramel running through every slice.
Chef Tips
- Melt the caramels slowly over low heat, stirring constantly. They scorch fast and turn grainy if you rush it.
- Pour the caramel over the warm first layer so it spreads evenly. If the cake has cooled, the caramel sets too quickly in thick clumps.
- Let the finished cake cool completely before cutting. The caramel is molten when hot and will ooze out, making a mess of your slices.
- Chopped pecans are the classic turtle choice, but walnuts work just as well.
Variations
- Use a dark chocolate or devil’s food cake mix for an even richer, deeper chocolate flavor.
- Drizzle extra melted caramel and a pinch of sea salt over the top before serving for a salted caramel finish.
- Add a layer of peanut butter chips alongside the chocolate chips for a chocolate-peanut-caramel combo.

Directions
Mix cake per directions on box.
Pour half of batter in a 9×13 inch pan and bake at 350℉ (180℃) for 15 minutes.
Peel caramels; mix with milk and margarine.
Blend well and pour over the cake. Sprinkle half the nuts and all the chocolate chips over caramel mixture.
Pour remaining mixture over cake.
Sprinkle the rest of the nuts over this. Bake for 20 minutes.
