1/2 spaghetti squash
1 tbls coconut oil
1 medium sweet onion, diced
2 cup baby spinach
1 cup quinoa, cooked
6 eggs, whisked

Directions

PREHEAT OVEN to 300 degrees

cut medium spaghetti squash in half and scoop out seeds place squash, cut side down, on baking sheet bake 20 to 25 minutes

while squash is cooking, in small sauce pan cook quinoa according to box instructions, remove from stove, let cool

in large sauce pan over medium heat add coconut oil. add onions and cook until translucent, then add baby spinach and cook for 2 minutes. remove from heat and let cool take squash out of oven, cool a few minutes, then scrap the threads of squash into a large bowl, add the spinach and onion mixture and quinoa. add the eggs and mix.

pour mixture onto baking sheet and spread evenly.

bake for 45 minutes.

remove from oven and cool. cut into serving size.
