Start by browning the ground beef with onion and garlic, then build flavor in layers: cider vinegar and brown sugar for a sweet-sour backbone, then curry powder, chili powder, Worcestershire, and a bouillon cube for savory depth.
Adding the curry to taste, in stages, is smart. Curry powders vary wildly in heat and strength, so building it up lets you dial in exactly the warmth you want.
The long simmer is what makes it. A couple of hours on the stove, or several in the crock pot, melts the tomato, spice, and beef into one rich, cohesive sauce.
Save the apple and raisins for the last half hour. Added late, the apple keeps a little bite and the raisins plump without dissolving, giving you sweet, juicy pops against the savory sauce.

Ingredients
1 1/2 lbs hamburger
2 large onions
small can tomato sauce
1-2 T cider vinegar
garlic
1-2 T brown sugar
1/4 t chili powder
salt and pepper
1 t worcestershire sauce
16 oz can tomato puree or tomato sauce
16 oz can diced tomatoes
1-2 beef bouillon cubes
raisins
1 apple (granny smith is good)
curry to taste
Directions
Brown hamburger, onions and garlic. Drain. Add cider vinegar and brown sugar.
Add salt and pepper to taste, chili powder, worcestershire sauce and bouillon cube. Add curry according to taste. Let it all brown another minute.
Add tomato purée and diced tomatoes. Let simmer a couple of hours on stove top or several in the crock pot. The last half hour add a peeled, diced apple and some raisins and more curry if you like. Add more liquid if it needs it.
Serve over rice or couscous.
