Homemade Devil's Food Cake Mix

177 ml chocolate chips

Directions

Add the sugar and chocolate chips into a food processor and whiz until the chocolate chips are finely chopped.

Add the remaining ingredients and blend until combined.

Store in an air-tight container until ready to use.

Makes a single layer cake pan.

Use as needed in recipes calling for boxed Devil's food cake mix.

To make cake

Preheat the oven to 350℉ (180℃) F.

In a large bowl, add the dry mix, 2 eggs, 1/2 cup sour cream, 1/2 cup of coffee (or water) and 1/2 cup melted butter.

Beat until there are no lumps remaining and pour into a greased cake pan.

Bake for 25 to 30 minutes, or until a toothpick comes out clean when inserted into the centre.

Cool in the pan for 1 1/2 hours.

When cool, remove and frost or use as desired.

A double-batch of this mix bakes up nicely in a 13x9 inch dish; bake for 35 to 45 minutes in that case.
